Chia Goodness Pancakes

Chia Goodness Pancakes

Ingredients:
1/2 cup Chia Goodness (any flavour)
1 3/4 cups water, milk or non-dairy drink.
1 cup flour
1 tsp baking powder
1/2 tsp salt
1 tbsp. sugar (optional)
1 tbsp coconut oil or butter
extra oil to cook pancakes

 

Directions:

  • Combine liquid with Chia Goodness, stir and let sit at least 5 minutes.
  • In another bowl, combine all dry ingredients.
  • Melt coconut oil or butter.
  • Add coconut oil to Chia Goodness, then add flour mixture and stir well.
  • Heat some oil or butter in frying pan, drop batter into pan to make desired size pancakes.
  • Turn once, and enjoy when both sides are browned.

Cranberry Chia Goodness Muffins

Cranberry Chia Goodness Muffins

Ingredients:
1/4 cup Cranberry Ginger Chia Goodness
1/2 cup water
3/4 cup flour (I used 1/2 cup white, 1/4 cup whole wheat)
1 tsp baking powder
1/2 tsp salt
1.5 tbsp honey
1.5 tbsp coconut oil
1/2 cup frozen cranberries
(1/4 cup crystallized ginger for half the cranberries if you wish)

 

Directions:

  • Preheat oven to 350° F.
  • Combine water and Chia Goodness® set aside for at least 10 minutes.
  • Combine flour, baking powder, & salt in another bowl.
  • Mix liquefied honey & coconut oil. To liquefy, measure and place together in an oven-safe bowl, then heat for a few minutes in warming oven.
  • Coarsely chop cranberries (and crystallized ginger if using) and add to honey & coconut oil.
  • Add ½ of chia mixture to dry mixture, then add ½ of cranberry-honey mixture, stirring between each one just enough to combine. Repeat. This will be stiffer than cake batter, but not as stiff as bread dough.
  • Fill muffin cups about 2/3 full.
  • Bake for about 30 - 40 minutes.

Gluten-Free Chia Goodness Scones

Gluten-Free Chia Goodness Scones

 

Ingredients:
¼ cup Chia Goodness (any flavour)
¾ cup Almond (or other) milk
1 cup gluten-free flour, consisting of at least 2 different ones.
1/3 cup potato flour
1/3 cup coconut flour
1/3 cup brown rice flour
2 tsp baking powder
1 tsp cinnamon
½ tsp salt
3 tbsp organic sugar
4 tbsp coconut oil
1/3 cup grated apple (less than 1 small apple)

 

Directions:

  • Preheat the oven to 400° F.
  • Combine Chia Goodness with ½ cup of milk. Stir and set aside, stirring occasionally.
  • Combine flours, baking powder and sugar in separate bowl.
  • Melt coconut oil.
  • Add rest of milk into oil.
  • Mix Chia Goodness® and oil / milk mix into flour mixture.
  • Add grated apple. Consistency will be looser than bread dough, stiffer than cake batter.
  • Take large spoon and form scones on baking powder. The shape will not change much from what goes into the oven, so form as desired. (You can put them in muffin papers if you want to)
  • Bake for 25 minutes, or until inserted toothpick comes out clean.
