Cocoa Mocha Apple Crisp

Ingredients:

Apple Mixture
2 apples
2 tablespoons pure maple syrup
2 teaspoons cinnamon
2 tablespoons water

Crumble Topping
1 cup quick-cooking oats
½ cup Nature's Earthly Choice Cocoa Mocha
¼ cup pure maple syrup
1 teaspoon cinnamon
1 teaspoon pure vanilla extract
2 tablespoons melted coconut oil or butter

 

Directions:

  • Preheat oven to 350 degrees F. Peel, core, and thinly slice the apples.
  • Toss with maple syrup, cinnamon, and maple syrup. Place in a greased baking dish.
  • In a separate bowl, combine oats, cocoa mocha, maple syrup, cinnamon, vanilla extract, and melted coconut oil or butter.
  • Bake for 35 to 40 minutes, or until topping becomes crunchy. Keep a close watch to make sure it doesn’t burn. Serve warm with a scoop of vanilla frozen yogurt or non-dairy ice cream.

Cocoa Mocha Avocado Brownies

Ingredients:
½ cup melted dark chocolate
1 medium ripe avocado
¼ cup olive oil
2 eggs
1 teaspoon pure vanilla extract
½ cup coconut sugar
1 cup Nature's Earthly Choice Cocoa Mocha
½ cup dark chocolate chips

 

Directions:

  • Preheat oven to 350 degrees F. Puree the avocado in a food processor or blender until smooth, then combine with melted dark chocolate.
  • Add oil, eggs, and vanilla. Mix well.
  • In a separate bowl, combine sugar and cocoa mocha. Add to the wet ingredients and stir until combined. Fold in the dark chocolate chips.
  • Pour the batter into a greased pan and cook for 30 minutes, or until a toothpick comes out clean. Let cool and cut into squares.

1 cup milk of choice
1 cup Greek or non-dairy yogurt
2 tablespoons Nature's Earthly Choice Cocoa Mocha
1 banana, sliced and frozen
1 tablespoon oats
1 teaspoon pure vanilla extract

 

Directions:

  • In a blender, combine milk, yogurt, cocoa mocha, frozen banana slices, oats, and vanilla extract.
  • Cover and blend until smooth.
  • Pour into a glass and top with a sprinkling of oats and cocoa mocha.

Ingredients:
4 slices of bread
½ cup milk of choice
2 eggs
¼ cup Nature's Earthly Choice Cocoa Mocha
¼ cup honey or maple syrup
1 teaspoon pure vanilla extract
Butter or coconut oil for cooking

 

Directions:

  • Combine the milk, eggs, and cocoa mocha in a bowl. Stir until totally combined.
  • Mix in the honey and vanilla extract.
  • Soak each slice of bread in the batter. Cook in a pan over medium heat, until each side is golden brown. Serve with fresh fruit, maple syrup, and a dusting of cocoa mocha.

Cocoa Mocha Fudgy Oatmeal Bars

Ingredients:

Oat Layer
2 ¼ cup quick-cooking oats
2 tablespoons milk of choice
½ cup honey
¼ cup nut or seed butter
1 teaspoon pure vanilla extract
¼ teaspoon ground cinnamon

Fudge Layer
1 cup dark chocolate chips
½ cup coconut oil
½ cup Nature's Earthly Choice Cocoa Mocha
½ cup honey
¼ teaspoon pure vanilla extract

 

Directions:

  • Combine the oats and milk in a small pot. Cook over low heat for 2 to 3 minutes, then add honey, nut or seed butter, vanilla, and cinnamon. Stir until the oats are evenly coated.
  • Line a deep baking pan with greased tin foil. Press half the oat mixture into an even layer, then pop in the freezer for 20 minutes or until set.
  • Meanwhile, in a small pot, mix the dark chocolate chips and coconut oil over low heat. Once melted, add the cocoa mocha, honey, and vanilla extract. Mix well.
  • Pour the liquid chocolate over the oat layer. Place in the freezer for 30 minutes or until the fudge has hardened.
  • Press the remaining oat mixture on top of the fudge, then cool in the refrigerator for at least 1 hour. Once the top layer has set, slice into bars and enjoy.

Cocoa Mocha Rice Crispy Treats

Ingredients:
3 cups brown rice crisp cereal
¾ cup pure maple syrup or honey
1 cup creamy nut or seed butter
1 tablespoon cocoa mocha powder
1 teaspoon pure vanilla extract

 

Directions:

  • In a small pot over low heat, combine the maple syrup and nut or seed butter.
  • Add the vanilla extract and cocoa mocha, stirring until the consistency is even.
  • When the edges start to bubble, turn off the heat and fold in the rice crisps. Mix until all the rice crisps are covered.
  • Spread the mixture onto a greased baking pan. If you’d like, add a drizzling of melted dark chocolate.
  • Refrigerate for at least 2 hours. Once set, cut into bars or squares.
