Banana Smoothie
Title

Serves Two

Ingredients:
1 Cup spinach
1 Cup coconut water
2 tbsp Superfood Blend
1 banana sliced
½ Cup ice

Directions:

  • Combine all ingredients in a blender and blend until smooth.

Hot Cereal

Ingredients:
⅓ Cup Nature's Earthly Choice Superfood Blend
1 Cup water or milk
A pinch of salt

Directions:

  • For each serving: Combine ⅓ cup Nature's Earthly Choice Superfood Blend with 1 cup water or milk and a pinch of salt in a bowl at least twice the size of the ingredients. Microwave on high for 2 - 2 ½ minutes or until cereal begins to thicken (it will thicken over time as well). Alternatively, simmer in boiling water on stovetop for 1 ½ – 2 minutes.

1 Cup kale
1 Cup coconut milk

½ Cup ice

Vanilla Superfood Smoothie

Serves Two

Ingredients:
2 Cups almond milk
½ Cup apples sliced
½ Cup orange slices
½ banana
1 Cup spinach
2 tbsp Superfood Blend
½ Cup ice

Directions:

  • Combine all ingredients in a blender and blend until smooth.

Spinach Superfood Smoothie
Spinach Superfood Smoothie

Ingredients:
1 cup baby spinach
1 banana
1 cup diced pineapple
2 tablespoons honey or maple syrup
1 cup milk of choice
1 to 2 tablespoons Nature’s Earthly Choice Superfood Blend

Directions:

  • In a blender, combine the baby spinach, banana, pineapple, honey, milk, and superfood blend. For an icier smoothie, add a handful of ice cubes. Blend until combined and smooth.
  • Pour into glasses and serve.

Superfood-Crusted French Toast
Superfood-Crusted French Toast

Ingredients:
2 eggs
2 tablespoons milk of choice
1 teaspoon pure vanilla extract
4 slices whole wheat bread
½ cup Nature’s Earthly Choice Superfood Blend
Butter or coconut oil for greasing

Directions:

  • In a shallow bowl, combine the eggs, milk, and vanilla. Prepare the superfood blend on a separate plate.
  • Dip a slice of bread in the egg mixture until soaked, but not soggy. Coat both sides with superfood blend. Repeat with the remaining bread slices.
  • In a pan, melt butter or coconut oil over medium heat. Cook both sides of each slice until crispy and light brown. Serve with fresh fruit, honey, or maple syrup.

Superfood Pumpkin Doughnuts
Superfood Pumpkin Doughnuts

Ingredients:
1 cup all-purpose or whole wheat flour (or combination)
½ cup sugar
1 teaspoon baking powder
2 to 3 tablespoons Nature’s Earthly Choice Superfood Blend
¼ teaspoon salt
1 teaspoon ground cinnamon
2 tablespoons olive oil
½ cup coconut milk
1 teaspoon pure vanilla extract
½ cup pumpkin puree
Butter or oil for greasing

Directions:

  • Pre-heat the oven to 350 degrees Fahrenheit. If using both all-purpose and whole wheat flour, sift them together. Combine the flours, sugar, baking powder, superfood blend, salt, and cinnamon in a large bowl. Mix well.
  • In a separate bowl, combine the olive oil, milk, vanilla, and pumpkin puree. Add the wet ingredients to the dry, mixing frequently. If the batter is too dry, add milk one tablespoon at a time until it resembles cake batter.
  • Grease a doughnut pan with butter or oil. Fill up ¾ of each cavity and bake for 10 to 12 minutes or until a toothpick comes out clean.

Directions:

Baked Berry Oatmeal
Baked Berry Oatmeal

Ingredients:
2 ¾ cups fresh or frozen berries
¾ cup Nature’s Earthly Choice Superfood Blend
2 cups old-fashioned oats
3 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon sea salt
¼ cup maple syrup or honey
2 eggs
1 tablespoon pure vanilla extract
3 tablespoons melted unsalted butter or olive oil
1 ½ cups milk of choice
2 tablespoons organic cane or brown sugar
Butter or oil for greasing

Directions:

  • Pre-heat the oven to 375 degrees Fahrenheit. Grease a 9x9-inch baking dish and spread 2 cups of berries along the dish, creating an even layer.
  • In a large bowl, combine the superfood blend, oats, cinnamon, baking powder, and sea salt. Add to the baking dish, completely covering the berries.
  • In a bowl, combine the maple syrup, eggs, vanilla extract, half the butter, and milk. Mix well and pour evenly onto the oats, making sure everything is completely submerged.
  • Garnish with the remaining berries, drizzle the remaining butter, and sprinkle on the sugar. Bake for 40 to 45 minutes or until the top is lightly golden. Serve warm or chilled with yogurt.

Vegan Matcha Ice Cream
Vegan Matcha Ice Cream

Ingredients:
2 ripe bananas, sliced
2 tablespoons Nature’s Earthly Choice Superfood Blend
1 tablespoon matcha powder
3 tablespoons maple syrup, honey, or coconut sugar
2 tablespoons milk of choice

Directions:

  • In a food processor or high-powered blender, combine all the ingredients. Give it a taste and adjust the ingredients as necessary.
  • Pour into a freezer-safe container and freeze for 5 hours or until set. Serve with berries or coconut flakes.
