Goji Cacao Powder Recipes
Breakfast Granola
Ingredients:
- 1 cup oats
- 1 cup Nature’s Earthly Choice™ Goji Cacao Superfood Blend
- 1 cup nuts of choice, chopped
- ½ cup coconut flakes
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ⅓ cup maple syrup
- 1 teaspoon vanilla extract
- ¼ cup olive oil or melted coconut oil
- ¼ cup raisins
Directions:
- Preheat oven to 325°F. Line a baking sheet with parchment paper. In a large bowl, combine the oats, goji cacao, nuts, coconut, cinnamon, and salt.
- In a separate bowl, combine the maple syrup, vanilla extract, and oil. Drizzle onto the dry ingredients and toss.
- Transfer to the baking sheet in an even layer. Bake 20 minutes or until lightly golden, stirring once halfway. Let cool and stir in raisins.
Dragon Fruit Smoothie Bowl with Goji Cacao
Ingredients:
- ¼ cup Nature’s Earthly Choice™ Goji Cacao Superfood Blend
- 1 cup dragon fruit, frozen
- ½ cup strawberries, frozen
- 1 medium ripe banana
- ⅓ cup coconut water or non-dairy milk
Directions:
- Add all the ingredients to a blender. Puree until smooth. Transfer to a bowl and top with chopped fruits, coconut flakes, chia seeds, and goji cacao.
Goji Cacao Coffee Shake
Ingredients:
- ½ cup non-dairy milk
- 2 tablespoons cashew butter
- 1 cup cold coffee, strongly brewed
- 3 tablespoons Nature’s Earthly Choice™ Goji Cacao Superfood Blend
- ½ banana, sliced and frozen
- 1 teaspoon chia seeds
Directions:
- Add all the ingredients to a blender. Puree until smooth. Top with chocolate shavings and goji cacao.
Goji Cacao Oatmeal Blender Pancakes
Ingredients:
- 2 medium ripe bananas
- 2 large eggs
- 1 ½ cups coconut milk (plus more as needed)
- 2 teaspoons vanilla extract
- ¾ cup Nature’s Earthly Choice™ Goji Cacao
- ¾ cup oats (or more goji cacao)
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- Pinch of salt
- Butter or oil
Directions:
- To a blender, add all the ingredients except the butter. The batter should be thick but pourable. If needed, add more milk, 1 tablespoon at a time.
- In a large skillet, warm the butter. Pour 1/3 cups of batter. Cook 2 to 3 minutes, or until the edges are golden brown. Flip and cook for another 1 to 2 minutes. Serve with fruit, coconut flakes, and maple syrup.
Superfood Chocolate Bark
Ingredients:
- 4 cups dark chocolate chips
- 2 tablespoons olive or coconut oil
- 3 tablespoons Nature’s Earthly Choice™ Goji Cacao
- 1 tablespoon hulled sunflower seeds
- 1 teaspoon chia seeds
- Ground turmeric
Directions:
- Fill 1/3 of a small pot with water. Place a heat-safe bowl on top, making sure the bottom doesn’t touch the water. Add the chocolate chips and oil to the bowl.
- Bring the water to a gentle boil. Stir the chocolate until melted and smooth. Mix in 1 tablespoon of goji cacao.
- Line a small baking dish with parchment paper. Pour the melted chocolate into the dish, spreading it into an even layer. Sprinkle the remaining goji cacao, sunflower seeds, chia seeds, and ground turmeric on top. (Option: Use ground ginger or matcha powder instead of turmeric.)
- Chill in the refrigerator until set. Break into pieces and enjoy.
