Maca Powder Recipes
Baked Carrot Cake Maca Donuts
Ingredients:
- ½ cup all-purpose flour
- ½ cup whole wheat flour
- ½ cup organic cane sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 tablespoons Nature’s Earthly Choice™ Maca Powder
- 2 tablespoons olive oil
- ½ cup coconut milk
- 2 eggs
- 1 teaspoon pure vanilla extract
- ¼ cup shredded coconut
- 1 ½ cups grated carrots
- Butter or oil for greasing
Directions:
- Pre-heat the oven to 375 degrees Fahrenheit. In a large bowl, combine the flours, sugar, baking powder, salt, cinnamon, nutmeg, and maca. Mix well.
- In a separate bowl, combine the olive oil, milk, eggs, and vanilla. Slowly add the wet ingredients to the dry ingredients.
- Roughly chop the shredded coconut and grated carrots. Fold into the batter. Scoop into a greased doughnut pan, filling up ¾ of each cavity. Bake for 10 to 12 minutes or until a toothpick comes out clean. Serve with cream cheese frosting and toasted coconut, if desired.
Energizing Maca Espresso Smoothie
Ingredients:
- 1 cold espresso shot
- 1 banana, sliced and frozen
- 1 teaspoon Nature’s Earthly Choice™ Maca Powder
- 1 cup milk of choice
- ¼ cup yogurt of choice
- ¼ teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
- 1 scoop protein powder of choice
Directions:
- In a blender, combine all the ingredients until smooth. Add 4 or 5 ice cubes for an icier smoothie. Top with cocoa powder, cinnamon, or coconut flakes.
Gingerbread Maca Granola
Ingredients:
- 2 cups old-fashioned oats
- 2 to 3 teaspoons Nature’s Earthly Choice™ Maca Powder
- ½ cup nuts of choice
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ⅓ cup honey or maple syrup
- 2 tablespoons molasses
- 1 teaspoon pure vanilla extract
- 2 tablespoons olive oil
- ½ cup candied ginger, chopped
- Butter or oil for greasing
Directions:
- Pre-heat the oven to 350 degrees Fahrenheit. In a bowl, combine the oats, maca powder, nuts, salt, cinnamon, and ground ginger.
- In a separate bowl, combine the honey, molasses, vanilla, and olive oil. Pour over the oat mixture and stir well.
- Evenly spread the mixture onto a greased baking sheet. Bake for 15 minutes or until toasted, tossing halfway. Let cool, mix in the candied ginger, and store in an air-tight container.
Maca Berry Chia Parfait
Ingredients:
- ½ cup berries
- ¼ cup milk of choice
- 1 teaspoon Nature’s Earthly Choice™ Maca Powder
- 1 teaspoon pure vanilla extract
- 3 tablespoons chia seeds
- Yogurt of choice
Directions:
- In a blender, combine the berries, milk, maca powder, and vanilla extract. Add the chia seeds and whisk for 5 minutes. Refrigerate overnight, at least 6 hours.
- Layer the berry-chia mixture in a glass with yogurt of your choice. Top with whipped cream, chopped berries, or coconut flakes.
Maca Chai Smoothie Bowl
Ingredients:
- 1 chai tea bag
- 1 cup milk of choice
- ¼ cup nut butter of choice
- 1 ripe banana
- 1 teaspoon Nature’s Earthly Choice™ Maca Powder
- 1 teaspoon pure vanilla extract
- ½ teaspoon ground cinnamon
Directions:
- Warm the milk in small pot over medium heat. Steep the chai tea bag until infused and let cool.
- In a blender, combine the chai-milk and remaining ingredients. Add 4 or 5 ice cubes for a frostier smoothie. Blend until combined.
- Transfer to a bowl and garnish with cinnamon, granola, coconut flakes, or cocoa powder.
