Goji Berry Powder Recipes
Mini Goji Cheesecakes
Ingredients:
- 1 cup graham cracker crumbs
- 4 tablespoons melted unsalted butter or olive oil
- 8 ounces cream cheese, room temperature
- ¼ cup sour cream, room temperature
- 1 egg
- ¼ cup organic cane sugar
- 1 teaspoon pure vanilla extract
- 3 tablespoons Nature’s Earthly Choice™ Goji Powder
Directions:
- Pre-heat the oven to 350 degrees Fahrenheit and fill a standard muffin pan with cupcake liners. In a bowl, combine the graham crackers and melted butter. Transfer about 1 tablespoon of the mixture to each liner, pressing down firmly to create a compact crust.
- In a large bowl, beat the cream cheese and sour cream together. Add the egg, sugar, vanilla, and goji powder and mix until smooth.
- Transfer about 2 tablespoons of the cheesecake mixture to each cavity. Bake for 18 to 20 minutes or until a toothpick comes out clean. If you’d like to remove the wrappers, let the cheesecakes cool completely. Serve chilled with whipped cream and berries.
Spiced Goji Latte
Ingredients:
- 1 ½ cup milk of choice
- 1 to 2 tablespoons Nature’s Earthly Choice™ Goji Powder
- ¼ teaspoon ground nutmeg
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground clove
- ¼ teaspoon ground ginger
- 2 tablespoons maple syrup or honey
- 1 teaspoon pure vanilla extract
Directions:
- In a small pot, warm the milk over medium heat. Do not let it boil.
- Add the goji powder and stir until dissolved. Mix in the spices, maple syrup, and vanilla extract, adjusting ingredients according to taste. Serve warm with whipped cream or cinnamon.
Superfood Macaroon Cookies
Ingredients:
- 2 egg whites
- ¼ cup organic cane sugar
- ¼ teaspoon salt
- 1 to 2 tablespoons Nature’s Earthly Choice™ Goji Powder
- 1 teaspoon Nature’s Earthly Choice™ Maca Powder
- 1 cup plus 2 tablespoons sweetened shredded coconut
Directions:
- Pre-heat the oven to 350 degrees Fahrenheit. Beat the egg whites until frothy. Add the sugar, salt, goji powder, and maca powder. Mix well.
- Fold in the shredded coconut and mix until thoroughly coated and combined. Transfer tablespoon-sized scoops to a metal sheet lined with parchment paper. Flatten down slightly and bake until golden brown, about 11 to 13 minutes.
Tropical Goji Smoothie Bowl
Ingredients:
- 1 ¼ cup coconut milk
- 1 banana, sliced and frozen
- ¼ cup pineapple, diced and frozen
- ½ cup mango, diced and frozen
- 2 to 4 tablespoons Nature’s Earthly Choice™ Goji Powder
Directions:
- In a blender, combine the coconut milk, banana, pineapple, mango, and goji powder. Add 4 or 5 ice cubes for a frostier smoothie. Blend until smooth.
- Transfer to a bowl and garnish with coconut flakes, chopped fruit, granola, or your favorite toppings.
Vegan Goji Tofu Cream Cheese
Ingredients:
- 1 14-ounce package of firm tofu
- 4 tablespoons honey or maple syrup
- 1 tablespoon organic cane sugar
- 1 teaspoon nutritional yeast
- 3 tablespoons lemon juice
- 2 to 3 tablespoons Nature’s Earthly Choice™ Goji Powder
Directions:
- Add the ingredients to a high-powered blender or food processor. Blend until combined, pausing occasionally to scrape down the sides. Add more sweetener, nutritional yeast, lemon juice, or goji according to your taste preference. Store in the refrigerator and serve on bagels, English muffins, or toast.
