Microwavable Lentils Recipes
Quick Lentil Quesadillas
Ingredients:
- 1 package Nature’s Earthly Choice™ Great Day Microwavable Lentils
- ½ medium onion, diced and sautéed (optional)
- 1 1.25-ounce packet taco seasoning
- 1 tablespoon tomato paste
- 1 cup shredded cheese
- 4 corn or flour tortillas
- Oil or butter
Directions:
- In a microwave-safe container, combine the lentils, onions, taco seasoning, and tomato paste. Stir well, cover, and microwave for 30 seconds. Mix, then microwave for another 30 seconds or until heated through. Drain, if needed.
- Lightly grease a large skillet. Add one tortilla. Layer about ¼ cup cheese then ½ cup lentils. Add another ¼ cup cheese, then top with another tortilla. Cook over medium heat for 3 to 4 minutes, or until the bottom tortilla is golden and crispy. Carefully flip, cook, and repeat for the second quesadilla. Cut into triangles and serve with sour cream, guacamole, or salsa.
Spiced Lentils With Poached Eggs
Ingredients:
- 1 package Nature’s Earthly Choice™ Great Day Microwavable Lentils
- 1 cup crushed tomatoes or tomato sauce
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ½ to 1 teaspoon garam masala
- ¼ teaspoon ground ginger
- ½ teaspoon ground cumin
- ½ teaspoon garlic powder
- Pinch of paprika
- 6 cups baby spinach, packed
- 4 eggs
- 1 tablespoon vinegar
Directions:
- In a skillet over medium heat, combine the lentils, tomatoes, and spices. Cook for 10 minutes or until most of the liquid has evaporated. Add the spinach in the last 3 minutes, stirring until wilted. Drain the lentils, if desired.
- While the lentils are cooking, fill a large skillet 2/3 full with water. Bring to a boil then reduce to a simmer. Add 1 tablespoon of vinegar.
- In a ramekin or small bowl, crack an egg. Carefully add to the water. Repeat with the remaining eggs, adding them one at a time. Cook for 4 minutes or until the whites have set. Serve over lentils and garnish with parsley, cilantro, or scallions if desired.
Turmeric Lentil Fritters
Ingredients:
- 1 package Nature’s Earthly Choice™ Great Day Microwavable Lentils
- ¼ teaspoon ground black pepper
- ½ teaspoon salt
- 1 teaspoon ground turmeric
- 1 teaspoon garlic powder
- ½ cup spinach, finely chopped
- ¼ cup + 2 tablespoons breadcrumbs (use gluten-free, if desired)
- 3 tablespoons grapeseed oil or olive oil
Directions:
- In a food processor, blend the lentils, spices, and spinach until the lentils are mushy. Add the breadcrumbs and process until incorporated. Form the mixture into bite-sized fritters.
- In a large skillet, heat the oil over medium heat. Fry the fritters until golden brown, about 3 to 4 minutes on each side. Serve with sour cream or plain yogurt.
